13 tips to make the most out of your luxury charter fine dining experience
One of the highlights of chartering a luxury superyacht is the fine dining experience. When it comes to cuisine no resort in the world that can match the personalized menu, the superb service and the delightful ambiance of a charter yacht.
A mega-yacht is your opportunity to have your own gourmet restaurant with a five-star chef at your beck and call. You will be living the grown-up version of a child in a candy store.
Here is some advice to make sure you get the most out of the cuisine during your trip.
Choose superyacht with a chef that matches your preferences
Every chef has specialties, and these should be considered as you choose your yacht . Your charter broker can often provide you with sample menus.
Be honest and clear when filling out your food preference sheets
Your chef will rely on your preference sheets to create the menus for your superyacht charter. Be absolutely clear about your likes and your dislikes, about what you normally eat and what you are prepared to sample.
Be upfront about any dietary restrictions
The preference sheet is also where you should be clear about any dietary restrictions, food allergies, or other factors that affect the meal planning. There’s no need to be shy, charter chefs have seen (and handled) everything from the common no-seafood or vegan diets to complicated sodium or gluten-free regimes. Diabetes? No problem! Kosher? Easy! As long as they are aware of your requirements, you can rest assured that you will serve superb cuisine.
Make sure any specific alcohol requests are known beforehand
Fine cuisine and fine wines go together like yachts and water, so it should be no surprise that a selection of extraordinary wines will be available for your tasting pleasure. If you have specific preferences, such as Italian reds only with dinner or an icy flute of champagne before breakfast, be sure to mention it beforehand. You can, in many cases, select the specific wines by label and vintage so they will be waiting for you on board.
Decide on how formal you would like your meals to be
How you want to dine is something else to consider. Every charter yacht is fully prepared to provide you with formal dining every night, and this would include fine china and silver, linen and a multi-course meal with wine paring. Depending on where you are chartering, you may want to break this up with more casual meals.
Eat meals in alternative locations
Breakfast and lunch are pleasant as alfresco meals, enjoyed more casually on the aft deck or under an umbrella on the upper deck. In some cases, depending on the design of the yacht, you can enjoy a “country-kitchen” meal at a dinette open to the galley, which allows you to interact with the chef and learn a few culinary tricks to take home.
Alert the crew if you are hungry
There is something about sea air, sunshine and yachts that creates an appetite, and your galley crew stands ready with a wide variety of snacks to satisfy that need. Just a mention to one of the crew that you’re a little hungry, and you’ll be presented with a collection of casual snacks
Give advanced notice if you want late night food
The chef does need to sleep so if you expect to have the munchies in the wee hours, let the crew know beforehand. Snacks can be prepared and stored near your suite for 24-hour needs.
Pre-plan any extra guests joining for meals
Your galley crew is prepared to cater to your every desire from a formal dinner to a more casual cocktail party with yummy hors d’oeuvres. There is one rule: this must be planned well beforehand with both the captain and the chef. There is no excuse for arriving back from shore with a handful of friends and expecting to be served.
Enjoy any specialist culinary equipment
The galleys on many charter yachts often include an unusual selection of equipment that can also bear on your choice of meals. A teppanyaki grill, for example, can serve up everything from stir-fry to Mongolian barbecue. Your yacht is also likely to have a full-sized barbecue grill on deck for everything from steaks to hamburgers. A surprising number of yachts are now equipped with gas-fired pizza ovens, allowing guests to enjoy a freshly baked slice of pizza while enjoying a movie.
Go for a picnic
Your crew may take you to a secluded beach for a picnic ashore. This will be a major production, with tents for shade, beach chairs, a barbecue and picnic tables, and even games ranging from beach golf to volleyball.
Tell your chef about any special occasions
Don’t forget to mention any special events to your chef as well, because yacht charter crews absolutely love to put on a party. Birthdays, anniversaries, engagements, and business coups all warrant a celebration and where better than on a charter yacht?
Have a themed evening
Your chef and cabin staff can provide entertainment as well and it’s fun to include a “pirate night”, for example, when everyone dresses in costume and the crew decorates the dining table with gold doubloons and treasure chests. You can expect the menu to reflect the event as well, with everything from “castaway stew” to Blackbeard’s brûlée.

In a shaker, 2 parts Coconut Rum, 1 part White Rum, 1 Part Blue Curacao, 3 parts Pineapple Juice and ice. Serve over ice with a Dash of Club Soda, a slice of Pineapple and a Maraschino Cherry.
Callista Classic
Roland and Vanessa Schaeffer, Captain and Chef aboard Callista
- ½ oz fresh lime juice
- 1 oz Passion fruit syrup
- 2 oz Westerhall 7-year aged dark rum
- Glass- Coupe
- Garnish- Lime twist
Fill a coupe with ice and water to chill. After well chilled, throw out ice and water. Dip wet rim of coupe into a nutmeg and sugar mixture. In an ice filled shaker, pour all ingredients and shake vigorously for 15 seconds to get a really good chill. Strain into coupe and garnish with lime twist.
Rosemary Jalapeño Daiquiri
Jeff and Caitlin Nichols, Captain and Chef aboard Port- Vino
Muddle 1 slice jalapeño and half sprig of rosemary with 3/4 oz simple syrup. Add 3/4 oz lime juice and 2oz Mount Gay silver rum and shake with ice. Strain into ice filled glass and garnish.

7 Things You Probably Didn't Know About Yacht Chefs
On a mega-yacht, 100-hour work weeks are the norm.
Jeremy Glass is a freelance journalist and copywriter based in Maine. He covers arts and entertainment, lifestyle, food, drinks, and travel, among other topics.
Below Deck sailed onto the scene in 2013, leaving in its wake a sea change across reality television as a genre. Audiences tuned in to the show—and its many offspring—to get a first-hand account of the $175,000-per-week charter trips of such exalted guests as Roy Orbison Jr. and the Queen of Versailles.
What separates shows like Below Deck from other reality programming is the amount of unrestricted access into the lives of people making a living mixing drinks and cooking five-star dinners for the exorbitantly wealthy. So, just how real is this account of luxury on the open ocean? "Poor management, poor behavior, bad seamanship," says David Skolnick, an accomplished yacht chef. "I've never seen the sorts of shenanigans they show in real life."
I spoke to real-life yacht chefs to find out what it's really like cooking at sea.
Restaurant experience is not required
Rachel Cunningham grew up in New Zealand, but spend the better part of her life exploring the world. "Yachting allows me to travel and get paid for it," says the 32-year-old chef. "The world is my home, and super yachts are just part of my commute." Cunningham dabbled in a lot of industries before settling into the yacht life—travel agent, tech journalist, website developer—but never thought about pursuing a culinary degree before becoming a yacht chef.
"I always had an interest in cooking, but never really considered going to culinary school," says Cunningham. "Nothing about that appealed to me. The high cost of the education followed by low wages and an unsociable career afterward? No thanks. I kept cooking as a passion. While I traveled, I would stop in small villages and watch locals preparing food."
She "knuckled down" after her first yachting job, spending weeks meticulously studying cookbooks and researching recipes online.
"I worked late as often as I could trying new techniques and learning more about high-end ingredients," she says. "I was so hungry for information and wanted to be better. The great thing about yachting is that once you have your foot in the door, and you persevere and work hard, you can continue upwards easily."
Skolnick is self-taught, as well. "Initially, I learned from public television: Julia Child, Jacques Pepin, Martin Yan, Frugal Gourmet, and others," he says.
The hours are brutal
"I've worked on busy yachts where it was not uncommon to work 16 hour days 7 days a week while on charter," says Cunningham. "It's easier to do when you are younger, but it's not sustainable and many yacht crew burn out working like that."
She adds, "A more realistic yacht experience would entail a yacht chef working 12 hour days, 7 days a week while looking out of the porthole at a gorgeous white sand beach but never going ashore."
... but the tips are ridiculous.
Cunningham has a friend who made a charter tip of "just under $40k per crew member … with more than 30 crew working." That's about a million dollars in tips total.
The day-to-day isn't that much different from a hotel
Cunningham's day usually starts at 6 a.m., where she heads from her room to the galley to prep breakfast and get organized. She values mornings as the only part of the day where she can make coffee and gather her thoughts.
Pastries go in the oven, guest are made fruit platters and charcuterie boards, which are sent out with the stewardesses. In the event kids are on board, Cunningham will pull out pancake and waffle batter—because what kind of kid doesn't want pancakes and waffles? Unlike Below Deck , Cunningham's been fortunate enough to work with a sous chef; they come in around 8 a.m. to work on crew lunch and dinners. From there, breakfast is made, the galley is cleaned, lunch and dinner get prepped, and so on until the guest is full.
"Depending on the guests, we can close the galley down as early as 8 p.m. or as late as 1 a.m. when we have party guests on," she says. "I've worked on yachts where it's normal to get a phone call at 2 a.m. for wagyu burgers or chocolate brownies because the guests have the munchies. It can be quite demanding."
You can't just pop out for sugar on the sea
One of the most difficult aspects of being a yacht chef is knowing that you can't just pop out over to the corner shop when you run out of an ingredient. "In general I start with Google," says Skolnick. "Online shopping and curbside pickup is the silver lining of COVID. In particularly limited places, or where the language problem is significant, I'll use a yacht agent. The key is flexibility in the face of substitutions."
"I once bartered sheets of gold leaf with micro herbs with another yacht while in Antigua," says Cunningham. "You have to get creative and really think outside the box."
Skolnick notes that the yacht kitchens are exceptionally small, so creativity is paramount: "Limited tools. Limited power. Limited space. Limited storage. Limited shopping," he says. But you make it work. "One of my mentors, chef Bernie Meehan, told me 'a good cook can make anything, anywhere, with anything.'"
The meals are as good as they look
"We source ingredients from all of the world for our guests," says Cunningham. "I use a variety of provisioners to do this, some of them specialize in high-end products from Japan and parts of Europe. None of it is cheap! I just did an order for some wagyu strip loins for $100 a piece. We get the best caviar, sometimes spending tens of thousands of dollars on it, especially when we have Russian guests. Truffles are pretty much standard. It is pure decadence. Of course, if we get really stuck and need things delivered ASAP, there are always the boss's helicopter on the aft deck to use."
Charter guests aren't all that bad

They thrust a $1500 bottle of red wine at us and demanded we share a drink with them. It was a lovely gesture, and I was all too happy to oblige. After all, the guest gets what the guest wants, and who am I to turn down a beautiful bottle of full bodied red wine at 11 p.m. after working 14 hours straight?"

I work as a private chef on board a luxury yacht in the British Virgin Islands. Here's what I make for my guests in a day.

This as-told-to essay is based on a conversation with Hannah Staddon, a 31-year-old private chef who works onboard the Mucho Gusto , a luxury charter in the British Virgin Islands. It has been edited for length and clarity.
I've been in the industry for around 13 years. I started as a yacht stewardess in the Mediterranean. I worked as a stew for about three years before gravitating toward the kitchen.
At one point, a chef I was working with didn't enjoy baking — but I was pretty good at it. That jumpstarted my interest in cooking, and I saved up through another season to put myself through chef's school back in South Africa, where I'm from.
I worked as a crew chef for a 160-foot yacht for a bit, but I realized I didn't even really like crew cooking because they just made food in big batches.
I cooked for 10 to 14 people daily for about four or five months. But I was getting burned out, and I wanted to be creative and make small, beautiful things.
So, my partner and I started looking for a boat together, and we ended up working together on board Mucho Gusto.
It's been seven years, and we haven't looked back.
My day in a nutshell
I get up at about 6 a.m. As soon as I wake up, I start prepping pastries, laying out the tables, and getting our guests coffee.
I usually make a continental spread for breakfast with homemade granola yogurt, fruit plates, and pastries. Then, I'll have a hot option for the day, like eggs benedict or waffles.
I like cooking light and healthy food. So I do spreads, sometimes with homemade focaccia, and then a protein, depending on the guests' preferences.
I also try to source most of my produce from local farmers and fishermen.
Lunches vary between plated salads and buffet-style courses. I whip up homemade ice cream, so there's always a selection available for dessert at lunch.
I start prepping dinner at about 5 p.m. and usually serve it at around 7 p.m.
Depending on how active the guests have been, I may serve a little snack plate before dinner, like some fresh fruits or a charcuterie board.
Related stories
By about 7 p.m., once all the guests have showered and are ready for dinner, I'll have set the table. Dominic, meanwhile, serves sundown cocktails.
Unless guests request a lighter meal, we usually do three courses — starters, mains, and desserts. I've gotten good reviews for my sushi spreads, in particular.
My homemade pasta is also generally a winner.
Sometimes, I make black pepper and truffle pasta with sauteed mushrooms and a big wagyu steak. People go nuts for that, so I must be doing something right.
We have an age limit of 12 on board the yacht. But at that age, many kids still have a limited palate, so food looks like chicken nuggets and chips or pizza all week. They generally only eat maybe two or three different meals.
Generally, mums communicate their preferences to me. So, I ensure that chicken nuggets and chips are stocked on board and heat them 20 minutes before meals.
After dessert, we clean up, stack the dishwasher, and prep for the next day. If I need to make focaccia dough or I'm doing cinnamon buns the next morning, I've got to make all the dough that evening.
After that, I can typically go to bed, which could be any time between 9:30 p.m. and 10:30 p.m.
Better than other restaurant jobs
Something I've enjoyed about the job is that I get to be a lot more involved with what's happening outside the kitchen,
If you're confined to working in a kitchen all day, you can feel detached from what happens outside it. And in a restaurant kitchen, you're often making the meal you've been told to make, as opposed to getting to be creative.
That's different on a yacht. I get to understand the guests and build relationships with them. And that's my favorite part of the job.

It is very common for the owners to have professional and even celebrity chefs on megayacht charter, that have been serving in some of the best restaurants in the world. The Mediterranean is a playground to some of the largest, most expensive, and luxurious mega yachts in the world. Most of them are built by Italian, Dutch, or German shipyards such as CRN, Benetti, Perini Navi, Fedship, Blohm & Voss, or Lurssen shipyards.
Numerous megayacht charters start cruising in the western Mediterranean and the yachts remain in the Mediterranean from May, June, July, August, and September during the European summer and these megayachts are usually being operated from south of France and Monaco and Amalfi Coast or Sicily Italy, Athens Greece and Bodrum Turkey. From the last embarkation points, these megayacht charter can travel to your charter pickup destination if you desire a megayacht to come and pick you where you are, no need to mention that you will be charged a delivery fee since there is fuel consumption involved as well as possible charter days lost by the owner.
During the winter months of the Mediterranean such as November, December, January, February, and March most of these megayachts move to the Caribbean and show off in the most popular destinations like St. Martin Antigua and the British Virgin Islands where there are deeper marinas for large yachts or well sheltered and easily accessible ports that can accommodate these megayachts. Megayacht Charter Fees
Mediterranean megayacht charter rates are a bit higher than the Caribbean, there is a base charter rate for the weekly use of the megayacht. this is usually quoted for a minimum of seven days on the megayacht unless otherwise indicated. If you wish a mega yacht charter for less than a week then the weekly charter rate is divided into 5 ( instead of 7 ) and multiplied by the number of days you wish to charter the yacht. In addition to Megayacht charter rates, there is a payment called the APA ( Advance Provisioning Allowance ) which is an advance payment that is handed over to the captain or the yacht manager so that the yacht can be provisioned with food and beverages and fueled as per your anticipated itinerary and personal preferences. The APA is calculated between 25-35 % of the charter rates depending on the yacht and your choice of itinerary.
We usually calculate 30% of the base rate as a reasonable APA. since these funds belong to you and the captain is only authorized to spend for fuels and provisions, there will be a final calculation/reconciliation at the end of the charter, the captain will calculate the expenditures and reconcile the APA so that may the charterer may get some of his money back or may be asked to pay the shortage from the charterer.
The VAT (Value Added Tax) varies from one country to another but probably averages out to about 13 to 15 % of the weekly charter rate. which is compulsory by the flag country. Delivery fee is applicable if you wish to be picked up from a place where is different than she is available for the agreed charter date. Say you want to be picked up in Athens and cruise around Mykonos and be dropped off in Santorini. If the yacht is already in Athens, Greece no delivery fee applies. However, If the yacht happens to be in Corfou, for example, there will be a delivery fee for her to travel empty to Athens for your pick up.
There is also a Redelivery fee that is charged when the charterer chooses a one-way yacht charter. Let’s say you have a pick up in Athens and want to be dropped off in Monaco then there will be a Redelivery fee to bring the boat back to her base or home port. Crew Gratuity is usually around 5% to 10% of the charter fee depending on your satisfaction.
Our charter contracts are always within the parameters of the standard Mediterranean Yacht Brokers Association. (MYBA) terms which is a widely accepted, recognized charter contract. Megayacht charters are not suitable for everyone when it comes to cost. However, the comfort, service quality, flexibility, and cruising speed provides a unique opportunity to see most of the popular places on the same trip. assuming that you want the luxury and high-end quality service on board a megayacht charter is certainly for you.
